A delicious and healthy soup, especially suitable for cold winter days.
Ingredients
- 1 tbsp. olive oil
- 1 medium onion, diced
- 2 medium carrots, diced
- 2 cloves garlic, finely chopped
- 2 ⅓ cups red or yellow lentils
- 8 cups of chicken or vegetable stock
- 1 teaspoon turmeric
- 1 ½ teaspoons ground cumin
- ¼ cup fresh chopped flat leaf parsley
- 2 cups baby spinach
- Juice of half a lemon
Method
- Heat oil in large pot over medium heat. Add onions and carrots. Sauté until soft, after about 5 to 6 minutes stirring.
- Add chopped garlic, turmeric and cumin. Continue for 2 to 3 minutes.
- Stir in lentils, add broth, and bring it to the boil. Reduce heat and cook covered on low heat for about 30 minutes until thickened. Remove from heat.
- Toss in parsley, spinach. Stir in the lemon juice and serve.
