Red Lentil Soup

A delicious and healthy soup, especially suitable for cold winter days.


  • 1 tbsp. olive oil
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 cloves garlic, finely chopped
  • 2 ⅓ cups red or yellow lentils
  • 8 cups of chicken or vegetable stock
  • 1 teaspoon turmeric
  • 1 ½ teaspoons ground cumin
  • ¼ cup fresh chopped flat leaf parsley
  • 2 cups baby spinach
  • Juice of half a lemon


  1. Heat oil in large pot over medium heat. Add onions and carrots. Sauté until soft, after about 5 to 6 minutes stirring.
  2. Add chopped garlic, turmeric and cumin. Continue for 2 to 3 minutes.
  3. Stir in lentils, add broth, and bring it to the boil. Reduce heat and cook covered on low heat for about 30 minutes until thickened. Remove from heat.
  4. Toss in parsley, spinach. Stir in the lemon juice and serve.
